Tolerance to acidic environments is an important adaptive feature of the probiotic bacterium Lactiplantibacillus plantarum to thrive in diverse ecological niches. We characterize a complex biological process associated to V-shaped multicellular structuring, which enables a highly coordinated adaptation of this bacterium to acidic environments. We elucidate the regulatory role of LuxS quorum sensing machinery in the V-shaped multicellular structuring and increased survivability in acidic environments.
