Fruit Ripening
Fruit ripening involves physiological and biological changes like softening, color change, flavor, and resistance to pathogen. This process is controlled by transcription factors and in few fruits also by ethylene. We are studying the mechanism of fruit development and ripening for improving fruit quality and shelflife.
In order to understand the mechanism of ripening we isolated from banana several transcription factors which control ethylene production. Our goal is to elucidate the mode of action of these transcription factors: are they controlling only ethylene production or also other processes which occur during fruit ripening. We have created banana transgenic plants by reducing expression of two transcription factors and extended shelflife. These plants are currently serving to study the control of ripening.
